We spent our careers building systems and structures for global brands, where precision is everything. But when we looked for the flavors of our heritage, we found only 'Italian-style' approximations, commodities stripped of their soul. TryScarpetta was born from our collective frustration: the need to apply architectural rigor to the larder. We aren't just sourcing food; we are rebuilding a connection to the authentic, unrefined truth of the Italian table.

Beyond the Name

In Italy, Scarpetta is more than a name; it is a storied gesture. It is the act of using a small piece of bread, the "little shoe", to sweep the plate, capturing the final, most flavorful remnants of a meal. For us, this represents a fundamental philosophy of integrity. It is a refusal to let a single drop of artisanal quality go to waste. We curate our boxes so that every oil, every sauce, and every grain is worthy of that final, deliberate sweep.

The Vetting Standard

We don't "buy" food; we vet producers with the same rigor we apply to a structural blueprint. To us, a product is only as good as the system that created it. If a producer bypasses the traditional tempo of the harvest for the sake of volume, or fails to show an uncompromising respect for their soil, they are disqualified. We curate based on a strict set of criteria: heritage seeds, chemical-free land, and a refusal to compromise on time. If it doesn't meet the standard, it doesn't make it into the box.
